In principle if you have UK qualifications you should be able to register in France, but sometimes they make it very hard by claiming qualifications etc aren't equivalent. pop in to your local chamber of commerce, I'm sure they will be very helpful... Re gites, best look through the entries in the 'Gite Business' category of this blog first, then let me know any particular questions, but setting up and running a gite is pretty straightforward without too many administrative hassles.
